Vesta’s dining room hums with energy from the guests who are drawn in by the menu of flavorful, ingredient-driven small plates and shareable, fire-grilled meats and vegetables served alongside Vesta’s signature sauces. Seeking sustainable and responsibly-sourced products to realize chef Kayser’s modern-American, internationally-inspired menu has earned Vesta a spot on the Good Food 100 list — an honor held by only 100 restaurants in America.
A warm, inviting vibe has always been the foundation of Vesta, and our food is complemented by a thoughtful, diverse wine list and cocktail menu offering both classic and creatively contemporary variations made with top local spirits. Vesta’s wine list receives consistent recognition from Wine Spectator, and the Sommelier Journal has featured Vesta’s barrel-aged cocktail program as a leader in the industry. The bar team and their stalwart leader, Kari Cummings, have received ’Best Wine Bar’ and ‘Best Bartender’ honors on Westword’s highly anticipated Best of Denver lists.
A reputation as Denver’s best date spot has been reinforced by seven ‘Best Place for a First Date’ awards, courtesy of 5280 Magazine. Westword acknowledged Vesta as the ‘Best Dinner Destination for Impressing a First Date’ and reserved a spot for Vesta on their list of the ’Top Ten Most Romantic Spots in Denver.’ Other shining moments for Vesta have included a mention on the Zagat Survey’s ‘Top Denver Area Restaurants’ list and multiple appointments to 5280’s annual ‘10 Best Denver Restaurant’ roundups.
But great date night ideas aside, perhaps Vesta’s proudest achievement has been serving the role as the go-to group destination for those celebrating special occasions, hosting visitors from out of town, impressing business clients, and treating work colleagues to a special meal. Vesta truly embodies the essence of the hearth — a place where delicious meals are prepared and friends and family gather by the warmth of the fire.
I love dining experiences. Whether at home, on a beach, at a farm, on a hike or in a restaurant, the combination of food, drink, atmosphere, people, play, laughter, hospitality, conversation and music combines to create these memorable experiences.
Old buildings have a built in character and story that lend themselves to the creation of something unique and special. Morphing old buildings into restaurants and bars filled with life is an incredibly rewarding experience. With each buildout comes a fantastic opportunity to team up with like minded architects, interior designers, graphic designers, chefs, mixologists and local artisans to bring the visions of a menu, a space and a vibe all together.
Vesta, our first restaurant, opened in 1997 in Denver’s LoDo. I was 25 years old and driven by pure ambition to open my dream restaurant. Surrounded by young, energetic, passionate, and fun people, we created a destination restaurant before LoDo itself became a destination. The term “Vesta Vibe” was coined and became the foundation combining positive energy, genuine hospitality, philanthropy and fun.
Vesta’s weathered brick walls, worn woods floors and open ceilings have stood sentry over thousands of tear-filled marriage proposals, birthday celebrations where candles were blown out and wishes made, anniversary dinners for couples who’ve been together for five, 15 or 50 years, and family get-togethers where loved ones gathered around Vesta’s tables. It is an honor to be a part of a place where so much joy is shared. Life happens at Vesta.
I am blessed to have an amazing team of passionate people who understand this industry and love it the way I do. My wife Jen has been with me since Vesta opened and continues to be an integral part of the design and daily decision making process while doing an incredible job with our two sons. We are remarkably lucky and fortunate to do what we do for a living as we get to see the rewards on the faces of our staff and guests on a daily basis.
